Out of my current 26 I only have one that's a real challenge to handle, but he's calming down slowly. He's still a juvie and I've only had him a few months, so I think he'll keep calming down. Hatchlings by nature are pretty squirrelly, but if you work with them most of them calm down as they age.

I have several that are super laid back and will just sit there and look around, most will hand-walk fine but do always like to try and climb my hair if given the chance lol

All of my adults are really easy to handle.

My Crestie Tobaggen is about 3 months old, and by now he is fine with being handled- he has no issues with my hands, and will eat anything off my fingers!
He clearly doesn't like strangers, but he IS very young still!
Just make sure to let your gecko get used to the sound of your voice and the way you smell- oh, and also, make sure he is awake before you grab him- and with time and patience, youll be fine. Cresties are ,as well as drop dead cute, VERY easy to work with!

Kind regards
Chrissie
