I've noticed what looks like fangs in my geckos mouth towards the back.
anyone else seen those in theirs?

why is it they look like they're breathing in their neck instead of their chest?

I'm not sure what you mean by 'fangs', they do have easily visible teeth, but nothing that looks like fangs.

Check this site - click on the "Adidtional Imagery" tab just below the main pictures.
Digimorph - Eublepharis macularius (leopard gecko)

The movies are interesting, but hard to follow. I'd just stick to the pictures available on the imagery tab.

There aren't any teeth long or big enough to call fangs.

What you're seeing in the back is just part of the mouth cavity. I'm not sure exactly what the structures are, but it may be the beginning of whatever passes for an esophagus with them, or the division between the airway and the esophagus. If you look carefully you can see some breath movements from the neck to the upper chest. I'm not that familiar with reptile anatomy, but it's likely that the airway just expands and contracts with the air movement more in them than in humans where we usually see the abdomen moving up and down as the diaphragm expands and contracts.
